Lavender Shortbread Cookies

Lavender is a popular ingredient in baking and is often used to make lavender shortbread cookies, lavender sugar cookies, and lavender scones. Here is a recipe for lavender shortbread cookies:
Ingredients
- 1 cup unsalted butter, softened
- 1/2 cup confectioners’ sugar
- 1 tsp vanilla extract
- 2 1/2 cups all-purpose flour
- 2 tbsp culinary lavender
- 1/4 tsp salt
Directions
- In a large mixing bowl, cream together the butter and confectioners’ sugar until smooth.
- Stir in the vanilla extract.
- In a separate mixing bowl, whisk together the flour, lavender, and salt.
- Gradually add the dry ingredients to the butter mixture, mixing until well combined.
- Divide the dough in half and shape each half into a log about 1 1/2 inches in diameter. Wrap each log in plastic wrap and refrigerate for at least 1 hour or until firm.
- Preheat the oven to 325°F (165°C). Line a baking sheet with parchment paper.
- Slice the dough into 1/4-inch thick rounds and place them on the prepared baking sheet.
- Bake for 15–20 minutes, or until the edges are lightly golden.
- Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
