Lavender Shortbread Cookies

Lavender is a popular ingredient in baking and is often used to make lavender shortbread cookies, lavender sugar cookies, and lavender scones. Here is a recipe for lavender shortbread cookies:

Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup confectioners' sugar
  • 1 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 2 tbsp culinary lavender
  • 1/4 tsp salt

Directions

  1. In a large mixing bowl, cream together the butter and confectioners' sugar until smooth.
  2. Stir in the vanilla extract.
  3. In a separate mixing bowl, whisk together the flour, lavender, and salt.
  4. Gradually add the dry ingredients to the butter mixture, mixing until well combined.
  5. Divide the dough in half and shape each half into a log about 1 1/2 inches in diameter. Wrap each log in plastic wrap and refrigerate for at least 1 hour or until firm.
  6. Preheat the oven to 325°F (165°C). Line a baking sheet with parchment paper.
  7. Slice the dough into 1/4-inch thick rounds and place them on the prepared baking sheet.
  8. Bake for 15-20 minutes, or until the edges are lightly golden.
  9. Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
